Amberjack Fillets
These amberjack fillets in olive oil caught in the Mediterranean are handmade according to traditional methods that have been handed down for generations. The amberjack fillets are simply seasoned with organic extra virgin olive oil and salt in order to preserve the taste and quality of the amberjack.
Once caught, the amberjack is immediately shot down on board the fishing boats and taken to the laboratories where processing takes place. It is first cut into slices and cleaned in running water. The slices are cooked in water and salt in order to keep the organoleptic qualities intact. Once cooked, always manually, it is proceed to a meticulous peeling and the elimination of the thorns. The clean slices are thus cut into fillets and placed inside the glass jars.
Excellent for seasoning your dishes and as a fresh second course for a salad or with oil and lemon.
No preservatives or starches are added.
