Single Varietal - Slow Food Presidium This oil is named after the olive variety from which it is extracted, the native Ottobratica, which matures ideally in October, the month dedicated to the beginning of its harvest. The Ottobratico is a majestic olive tree that the Olearia San Giorgio and the entire Fazari family have firmly committed to making productive, always dedicating care, systematic pruning, cultural experiments, improvements, and extraction innovations to these trees. The result has been a crescendo of approval, favor, recognition, awards, and in 2017, the awarding of the Slow Food Presidium.
Sensory Profile
In the olfactory test, the Ottobratico monocultivar shows a delicate, persistent fruitiness with marked and predominant notes of fresh cut grass, artichoke, unripe tomato, and red fruits.
The taste is enveloping with vegetal tones of lettuce, broad beans, and a harmonious and delicate finish of black pepper notes. Pronounced and mild spiciness.
Ideal on grilled red meats, but also on delicate fish, valuable on a dish of legumes, especially beans, even when cold.
