The ASPROMONTANO
Chjanotu
Virgin Olive Oil
The Aspromontano virgin olive oil is produced from the same company lands as its extra virgin namesake.
We have named it "Chjanotu," which is the dialectal equivalent of the term "pianigiano," as we are located near the Plain of Gioia Tauro.
It is a blend of the olive varieties Ottobratica, Carolea, and Sinopolese. The olives from which it is extracted, unlike the extra virgin, are harvested and milled at almost full maturity, in order to obtain a sweeter oil, suitable for cooking, frying, and preserving. Lovers of sweet oils can use it raw on everything.
Sensory Profile
With an intense yellow color, it presents a clear scent of ripe olives and delicate tones of grass, white apple, and ripe tomato on the nose.
The taste is harmonious and elegant, delicate in tones of ripe and dried fruit with a herbal base.
Very mild bitter tones, spicy notes, and peeled almond.
